Project Description: This fast track renovation project included upgrading and improving approximately 21,180 square feet of the University Memorial Center (UMC) food service cafeteria, The Alferd Packer Restaurant & Grill and Baby Does’s Coffee & Bakery. Improvements were made to the existing grill server area space and adjoining seating to increase traffic flow, open up the front-of-house and allow for visibility to the menu offerings. The remodel was completed in three months and the adjacent retail and food service vendors remained open during construction.
The project incorporated sustainable building materials in the finishes and the majority of the construction debris was diverted from the landfill. Although the project is not registered with the USGBC for LEED® certification, much of the design guidelines incorporated LEED standards. LEED tracking was done throughout the project and will be used for teaching sustainable design aspects to the students at the University of Colorado.
